So I'm getting ready to build a screened-in enclosure for a bog garden I'm planning on making (screen is to keep squirrels & deer out) and I wasn't sure how tall to make it. The two tallest plants in it will be the Cobra Lily (Darlingtonia californica) and Northern Purple Pitcher plant (S. purpurea ssp. purpurea). How tall do those plants get?

In the wild, Darlingtonia can grow up to 3 ft tall. In cultivation, that is extremely rare. I would expect somewhere around 2 feet once the plant is over 7 years old or so. Purpurea do not grow tall at all, they stay close to the ground.

As starchy has said, they don't get very big.

You'll probably be wanting around two to three foot of headroom, as the Darlingtonia will grow, and the plants will flower eventually, and flowers can get quite tall.
