I can't find any unfertilized peat in my area, but what I did find were coco coir bricks. I heard they can have a lot of salt in them, would rinsing the coco coir make it safe and a substitute for any carnivorous plant that needs peat?

Soak them overnight and check the TDS. If it's too high, keep rinsing and soaking until it gets down to an acceptable level.
I would start with tap water, then do a final with distilled or rain water just in case it takes you multiple rinses.

Yes, like Chef said, you do have to wash it multiple times to bring the TDS level down. But I love the texture of it - spongey and airy. It should work fine after rinsing.
