Is there anything wrong with giving pitcher plants a dose of Osmocote before they go dormant for the winter?

Yes. Fertilizer is for growth. When the plants are dormant, they aren't growing. This isn't the time for fertilizer (Sarracenia don't need it anyway if they can catch a decent amount of bugs).
