I just noticed that one of Venus Flytraps is going to be left with one trap left. The others have fully blacken due to old age.

I don’t want to cut off the flower stalk because it’s already gone past 5 inches and I’m trying to get seeds. Would it be okay?

It might. However, in many cases, a VFT flowering is its last ditch effort to get seeds and propagate that way because of its poor or declining health. Personally, I would still cut that stalk and plant it to try for strikes, maybe even cut it into two pieces.
Just my thoughts.

From what I've seen with my flytraps, they usually don't grow leaves when blooming. Their reserves are focused on supporting the flowers. If this was one of mine, I would feed the healthy trap to get some extra nutrients into the plant.
