Are humidity domes absolutely necessary? Because... the way I have my plants setup, I can't really have a dome over the plants except for the plastic smoothie cups that came with the plants. And those cups aren't wide enough and all the plants just lean against the side.

I would like my plants to just be in open air...and rely on the tray water for humidity.

Domes can often do more harm than good in my experience. My plants grow just fine without a dome in 15%humidity on hot days.
