When your plant goes dormant, it just loses some leaves. And you know it's coming because of the time of year. If your plant is dying, there are many things that can indicate this. It totally depends on what it's dying from. It's easiest to tell your plant is ill during the active growing season. If it stops producing new healthy traps something is wrong. When the plant is dormant, it's much harder to tell if it's dying.
