Well, the first suggestion would be to cut the stalk when it's about 2 or 3 inches, then putting it into the media to get possible strikes.
We're beyond that possibility now, so let the seed pods mature, dry out, and start to split. That's when you know the seeds are ready to harvest.
Place a small bowl under the pod, not too far below or the seeds may bounce out, then gently roll the pod between your fingers to release the seeds.
They will store well in your fridge for a couple of years at least, but you'll have a better germination rate with fresh seeds.
