1. Would the plant survive?
Probably, as long as the rhizome would still be in good shape (after all, we do take lots of pullings for propagation)

2. Is this a good idea?
Um, not really...? I'm not sure why you'd do this - VFTs are more than willing to kill old leaves on their own in order to replace them - Until they do, old leaves are still providing the plant with energy, and when they do, old leaves return most of their nutrients to the plant for reuse. Leading to...

3. Would this hurt the plant?
Yes. You'd just be leaving it with less material to harvest energy with and less resources to grow with. It's something flytraps are built to survive - it would only be a setback - but it would still be a setback.

This feels like an XY problem - what issue is it that you're trying to solve with this approach? Odds are the best solution is to wait and let the plant figure it out...
