My live sphagnum moss looks really dense, and not billowy and soft like I have seen in pictures. Has anyone seen this before? Any ideas as to what I am doing wrong? I have definitely let it dry out too much one or two times in the past, and there is a bit of star moss peaking through too.

Sphagnum develops a dense growing habit after a long period of undisturbed growth. And yours appears to be appreciating the amount of sun it's getting, by that red hue.
There is absolutely nothing wrong with your sphagnum! :) It is perfectly healthy!

I would say the compact growth you are seeing is ideal, and also much hardier. With higher humidity and lower light it will stretch longer, but also dry out much quicker.
