I change the photoperiod off my lights to more-or-less mimic daylight. Most of my Mexican pings put out succulent leaves in the winter. Some do it whenever they feel like it. If you're under lights, vary them by season. Otherwise, I wouldn't worry about dormancy - they'll do it if they need it. My experience, anyhow.
