I usually hold a piece of paper under the flower stalk and tap it. When black dots appear on the paper, you're harvesting seeds. The pods ripen from the bottom up, so they're all not ready at the same time.

In my experience the first pod ripens around the time the last pod blooms. Although this isn't very effective. What I do now is that I peel off the petals to expose the actual pod. And if you can see that it is splitting it is ripe. Make sure that the pod is black and not green.
