I have my nepenthes planted in sphagnum peat moss. I know you are supposed to plant them in LFSM, but I didn't have any when I got it. I've heard that peat moss makes root rot easier, and that you need to be more careful when you water it. I wait until the top inch or so is dry before watering. Do you guys think this is giving enough time for the soil to dry out before I water it?

That should be fine for a while. You're definitely going to need to change the media, or at least add something to aerate it (like sand or perlite). Otherwise the peat will compact and suffocate the roots, or create an anaerobic environment for the bacteria that cause root rot.
