I use trays that have dents in them. I believe the grooves are usually added so seed trays can slot into them and be closer to the water level however I sit pots in trays too without problems.

If you find yourself stuck as to where you can get flat trays (perhaps try litter boxes? They're usually similar shapes to watering trays and are completely flat) maybe you can stuff the groves with silica sand (though water would still fall into them).
