I can't even keep small 2.5" pots out in the sun unless they are in a large tray of water. With just a small pot and small amount of water, they could be dried up & dead before 2 pm

Right. I hate to keep plants sitting in water too, but I have exactly the same problem: tiny pots (2.5" / 6.5 cm. square) and extremely hot days (100+ Fahrenheit / 38+ Celsius), often with a stiff, hot, dry breeze, so I have to keep the plants sitting in water. I do try to drain it before midafternoon though, so they can dry some before night, if I can.
