So I got my GF a mini phal for v-day. It was doing great, had plenty of flowers on it, then one day they all dried up. The rest of the plant looks healthy but the flowers (newly open, old, and buds that were still closed) just dried up out of nowhere. Any idea why this happened?

Maybe it's because of insufficent sunlight. Phals take no direct sun but bright indirect.(this would be a north or east window)
If this not the case then it might be with the watering. You should water them every 7-10 days. To water them take the plant to the sink and just turn on the foset and let the water drain threw the entire pot.

this video gives better intructions.

Also a shot of fertilizer every once in a while helps give them a boost.
