They're honestly pretty bulletproof. I've kept mine in water anywhere from halfway up the pot to just ~1/4" deep or less and they haven't shown any sign that they care either way. Mine are normally in a peat-heavy mix with 90%+ humidity which helps moisture retention a ton though, so going off your picture if it was me personally I'd aim for between a quarter and halfway up the pot.
