Planning on getting Darlingtonia seeds soon. Can I just place them in the dirt and leave them in the morning sun? Do I have to put plastic over them? And how often do I water?

Firstly, you need to stratify them. Second, dirt is usually not great for CPs. Most prefer a mix of silica sand/peat or LFSM.
Most people keep humidity high using a cover, and stand the pot in water.

I put mine on lfs/perlite on the fridge 6 weeks. Then under bright grow lights w a ziplock for humidity until I see sprouts.

That depends on the freshness of the seed, temperature, and other factors. Generally, anywhere from 2 weeks (very fresh seed), and onwards.

There is a possibility that they might sprout if they're fresh. However, stratification greatly increases the chances of germination.
