I probably can't help you too much with the alternate OS since I don't know much about them. You can get the same "all in focus" effect if you have (enough light or a tripod for this too) the aperture small (f-stop number large...it's kinda backwards). As far as time lapse I'm not sure. I'm going to post up a photo tutorial/information thread when I get a little free time to take some pictures to explain the basic functions and effects that you can get with cameras that will hopefully help show some of the stuff that you can accomplish with a little advanced knowledge!
