So, I have intermedia, capensis 'alba" and brumanni 'humpty doo' that flowered.

How do I know if they pollinated, and if so, when to snip/collect the seeds?

Photos for reference (sorry, hard to focus).

IMO all those seeds are ready to collect, any pods that are 75%+ brown/black are ready to harvest but that Intermedia flower stalk is way out of focus.

Actually, all the Capensis pods that are black can be harvested, but none of the ones on the upper half of the stalk.

Ok, grabbed an older (but more sophisticated) camera (iPhone 11 vs Cannon XTi)...much better shots.

That's true, you can harvest the bottom ones now, or you can wait and harvest them all at once (usually what I do).
The older Burmannii stalk was blurred out in the first photo, but now that I can see it, I think you can harvest it.

Shake each stalk, without breaking it, over a sheet of white paper and if any seeds are ready they will fall out. You can do this every day or two as more seed pods mature. You'll get hundreds (or thousands) of seeds.
