Now that she has bloomed should I cut the stem low, down towards the bottom? I’d like to transfer my plant into a 6-8” pot. I have been waiting for the flower to bloom. I’ve kept my VFT in constant water but started to read recently that it’s unnecessary for my climate. And as it is starting to get colder, I don’t think she needs to be sitting in water. Thanks so much for any info!

If you were to cut it, you should have cut it when it was only two or three inches tall, well before now, as the plant has already expended the massive amounts of energy to get to this point. Cutting it now would be like you jacking up a car to fill a tire with a bike pump (been there, no fun), then slashing the tire right as you get to 32 psi.
Going forward, what are your goals with it?
If you want seeds, leave it be as it should self pollinate as it closes, and you'll have seeds in a few weeks. Do not repot it right now as that will stress it a bit and could cause it to not produce seeds.
If you don't care about the seeds, then go ahead and cut it and repot it now.
