I understand that some sarracenia need to be trimmed for the winter while some don't. does sarracenia x catesbei need to be trimmed?

Sarrs only need to be trimmed if their pitchers dry up. If not, you can leave their pitchers be.

If the pitchers are still green or red, then I leave them on the plants during winter as they're still good for photosynthesis purposes.

On Sarracenia flava and oreophila, I usually cut off last season's pitchers (which are mostly brown by the start of winter) and leave the plants with their phyllodia.
