If you grow them outside, yes they will go dormant by them selfs, if not you can put them in the fridge in a plastic bag.And no they dont really grow when they are dormant.

A truly dormant plant kept between 35*F - 50*F doesn't need any sunlight, and can be kept in pure darkness. Those that keep them warmer indoors for the winter (which I don't like to do personally) still use very bright grow lights, just on a shorter time cycle i.e. 8am-5pm.

Recently someone has stated you can skip dormancy forever if you use super-powerful grow lights. There is an ICPS article about this small study somewhere.

So it really depends on what kind of environment you plan to keep your VFT in for the winter.
