I've notice my sundews roots are poking out the pot slightly.
As I just bought them online a few days ago I'm wondering if it is too risky to repot them right now as they are adjusting to their new habitat.
What do you think I should do?

If it's only slight, but the plant is in good health otherwise, then you could go either way.
Let it acclimate a bit, or, since it sounds like it came potted, it shouldn't get too shocky if it were to be repotted now.
If you do repot it, I wouldn't remove too much of the old media in order to mitigate any shock from the repotting. But that's just my opinion from my experience.
