Hello:
I am new to Cephalotus. I read that Cephalotus need a periodic drying. What is periodic drying? Is that letting the tray dry once a week - twice a month - or what? How long should this drying last?
Any additional information will be greatly appreciated.

Drying all depends on the medium. I use stuff that quickly drains so let my plants sit in water with them hardly drying out ever. It's all depends on conditions as well in my opinion.

I do wanna note I will change the water in the tray depending on what it looks like etc. if your using pure sphagnum you might not have to use a tray. Pure peat as well, they retain a good amount of water.
