It depends on the variety. Typically, I grow the mountain variety, as it is easier to care for than the coastal variety. Both require cooler nights, the coastal coolish days as well. The real key is keeping the roots cool. This can be done a variety of ways, but the easiest, cheapest way is to put ice on top of the soil and let it melt.
