If hypothetically a pitcher were to be decapitated half way down the funnel would it regenerate the top part, including the lip and lid?

No, it won’t regenerate. The pitcher will still function without the lid though

Is there any point in keeping this pitcher or should I severe it and wait for a new one to grow?

The plant doesn’t need a lid to work. A beheaded pitcher can still be fed and will photosynthesis. The more pitchers the better, whether they have a lid or not because they will produce more food. More food from photosynthesis means bigger new pitchers
