Ok, so I’m pretty confident that I’ve got the thermostat set when it can’t go much below 50 degrees F.
Time to button up things and run for another 24 hours or so. then hook the control system back up. Even if control system fails, it wouldn’t go below 50 and that should be just ok for the plants (which I’ll have to slowly build up the courage and money to buy.)

You might run an experiment with some dry ice to drop the temperature by a method other than the refrigerant. That way, you can test the controls to make sure that it kills the power to the cooler, regardless of what the cooler is doing.
