How dry to my flower stalks need to be before I harvest the seeds? Should I wait until the stalk turns black below the dead bloom, or should I harvest them before that? Will most of the seeds just fall out if I wait too long?
The reason I ask is because I have what appear to be a few seedlings growing already, and only one flower stalk has turned black below the bloom.

As soon as the seed pod splits open, it's ready for harvest. Sometimes the pod doesn't split open, but once the stalk starts turning black just below the seed pod, you can harvest it.

Yes, especially if you have them outside where the wind, rain and animals and insects can knock them out of the seed pod.
