There are many grades of peat moss: if you want to grow D. capensis, I would recommend organic Canadian Peat moss. Some peat mosses come from other sources around the globe: they can be treated with chemicals, or be poorly refined. As for washing the peat, rinse the peat twice with tap water, and once with distilled, RO, or rain water. Drosera thrives best in a well draining mixture, 50% organic Canadian peat moss and 50% coarse silica sand.
