I was wondering if highland Nepenthes would be okay in full sun in one of these small greenhouses. I would have fans and cool mist humidifier inside. Would they be cooked inside of these?

Yeah. They get hot if left in the sun even for a few hours in the morning.
I'd go with a regular greenhouse if you can, because there are many ways to cool one, whereas the mini greenhouses have virtually no way to cool them aside from keeping the door open.

mine sits at about 70-75 right now inside with the door open with just one 24 inch T5 HO two bulb in my house. Its still a bit cool where I am.

Fans are not a means to cool, all they do is circulate already hot air.

That could be feasible if you decided to set it up indoors where it's easier to control the atmosphere.

If you are able to circulate the air, by using a fan to push hot air out and cooler air in, then I don't see why you can't use one of these to grow Nepenthes. I know one of my friends is able to grow species like trusmadiensis, Ephippiata, lowii in one of these.
