I think the brand of the camera matters. Much of it depends on the quality of the lens. A 12.1 Mega pixel sensor doesn't do you much good if the lens in front of it is poor in quality.

For point and shoot cameras I would go with either Olympus or Canon.

For a DSLR I would go Nikon.

The one i posted has hd recording, and It's a simple point and shoot.

The Canon G9 or G10 are Amazing compact cameras. Large sensors, great macro and both do HD video.
The G9 is 12.1 MP. It also takes photos in RAW. Which means nothing from the picture is taken out.. It's the "RAW" picture.. Wheras jpeg crushes down pictures.
It has image stabalization for those with shaky hands..
6x Optical zoom..
Face Detection..

And here is a Macro picture taken with it to show you how close you'd get to your plants..

Do you know if you can flash the OS with an alternate? So you can do time-lapse or multiple focal length series shots?

Well the OS that comes with the camera gives you the features that it advertised. However, people that want to do kite aerial photography need a photo taken every 10 seconds. How are you going to do that? The answer is an alternate operating system with these additional features.

Another one is the multiple focal lengths. Search for A590si on this forum. There was a good discussion about it with some interesting links.
